Tucked away in a Taipei Zhongshan District alley, Sake Bar is a reservation-only sake spot. I couldn't get in last time without a booking, so this time I planned ahead. Starting with a limited-edition Black Dragon Daiginjo from Hyogo (served in a Burgundy glass), then moving to an aged Hatsugane Ginjo Autumn Sake, and finishing with a Yamagata Masamune -5°C low-temperature aged ginjo. These aged sakes are richer and fuller than regular ones, with a deep, concentrated umami of rice hitting your palate. Three glasses were just right for tonight.
