Taipei Regent Hotel B2 INLUXE | 霽雲 premium bird's nest tasting. I spent the afternoon at the tasting salon hosted by Brenda and 霽雲 for this new bird's nest brand — the nests are produced in a cleanroom in Malaysia, and each one carries a traceability barcode, with only the top 2% of nests from the nature reserve selected. We tried four different preparations, from room-temperature with gold leaf to a hot chicken broth and a grape sorbet pairing, and finished with a blind tasting comparing two types.
